The trouble with cups

A cup measures volume. A gram measures weight. Going from one to the other depends entirely on what you are measuring: a cup of flour weighs about 120 g, a cup of sugar about 198 g. That is why there is no universal conversion here. You pick the ingredient and its density is used.

And not all cups are the same

  • US cup: 236.6 ml. The one in American recipes.
  • US legal cup: 240 ml. The one used on nutrition labels.
  • Metric cup: 250 ml. Standard in Australia and parts of Europe.

That is a 6 % spread between the first and the last. You will notice it in a cake, and more in a bread dough.

Where the weights come from

Solid ingredients use the King Arthur Baking ingredient weight chart, a standard baking reference. Liquids use their documented physical density rather than the 8-ounce rounding most American cookbooks apply. It is all listed in the ingredient table.
