Why it varies so much
A cup measures volume, not weight. What changes between ingredients is density: how much matter fits in that space. Cocoa powder weighs 84 g per cup and honey 336: four times as much in the same container.
Which is why any chart saying "1 cup = 200 g" without naming the ingredient is wrong for almost everything.
