How it is calculated
This conversion depends on nothing: it is an exact equivalence between two units of mass.
That factor is not an approximation: since 1959 the avoirdupois pound has been defined as exactly 0.45359237 kg, and the ounce is one sixteenth of a pound. Hence 28.349523125 g.
The ounce of weight has nothing to do with the fluid ounce, which measures volume. Two different units sharing a name, and confusing them is the most common mistake when working between recipe systems.
Worked example
A recipe calls for 8 oz of cream cheese:
- 8 x 28.349523125 = 226.8 g
- For cooking: 225 g is precise enough
That is, of course, the standard American block of cream cheese: 8 ounces, 227 g rounded.
Good to know
- Ounce of weight vs fluid ounce. The first measures mass (28.35 g), the second volume (29.57 ml). They only roughly coincide for water.
- 16 ounces make a pound. And a pound is 453.6 g.
- Practical rounding. In cooking, rounding 226.8 to 225 g changes nothing. In a pharmacy it would, but this is a kitchen.
