The stick system

In the United States butter is sold in 113 g sticks wrapped in paper marked at every tablespoon. That is why American recipes say "1 stick of butter" or "1/2 cup": they are the same thing. A one-pound pack holds four sticks, 454 g in total.

In Europe butter comes in 250 g blocks with no markings. The practical conversion: half a European block is about 125 g, slightly more than an American stick.

Measuring butter without a scale

With no scale and no marked sticks, the displacement method works well: fill a measuring jug with water to a mark, add butter until the level rises by the volume you need, then drain. It is fiddly, but it is accurate.

Cold, softened or melted

The weight does not change, but the recipe does. Cold cubed butter makes flaky pastry; softened butter creams with sugar and carries air; melted butter gives a denser, moister crumb. When a recipe specifies the temperature, it is not decoration.
